Yes, the neck reset is very risky.  I've done 60 so far, maybe 1 or 2 weren't difficult, many were extremely difficult.

Yamaha absolutely won't have a replacement bridge.  It would have to be hand made.  The then standard narrow 1.98" string spacing is unlike anything made today.  I've made a few bridges.  Modern Indian rosewood is too purple, I use Madagascar rosewood, which looks more like Brazilian rosewood.  I could affect the tone very slightly, since the modern wood won't be as dry as the original 50 year old bridge.  The most important part is to keep the weight down, additional weight will very slightly alter the resonant frequency of the top.  But it would more than like not be noticeable or possibly measurable.
